In the early days there was no way to detect how much energy was left, but latter on they were able to make a device that could estimate how much energy was left in the saber, but they have yet to make it very accurate and the device is actually quite large, so it could not be carried. Jedis would check their sabers once in a great while, usually before something like a large battle similar to the one n the Clone Wars to make sure they would be ok. Again, it takes a really long time for it to run out, so it is not something to worry too much about.
